Introduction

I got this from a coworker today. She made it here at work. It smelled wonderful and it tasted even better!!! I have a few things I may tweek but it is fantastic, fills you up and is guilt free!

Makes a great lunch, light dinner or a side item for dinner. WOuld go well with some grilled fish or chicken or pork.

Ingredients

    Onion - 1Cup Chopped
    Mushrooms - 1Cup Chopped
    Spinich - 1 10oz. box (Frozen)
    Laughing Cow Cheese - 4 wedges Creamy swiss Room temp
    Pumpkin Puree - 1 15oz can (Low Sodium)
    Egg Beaters - 1 1/4Cups
    Garlic - 2 tsp.
    Salt and pepper to taste

Directions

Preheat oven to 350 degrees. Spray 9" pie pan with nonstick spray and set aside.

Bring a large skillet sprayed with nonstick spry to medium-high heat on the stove. Add the onion, garlic and mushroom, stiring occasionally, cook until softened about 5min.

Add spinich and cook about 1-2min.

Transfer to large mixing bowl. Add cheese wedges, breaking them into pieces as you add them. Mix thoroughly, until cheese has melted and is evenly distributed. Add all the remaining ingredients to the bowl and mix well. Evenly transfer mixture to the pie pan.

Bake in the oven until firm and lightly browned on top. About 1 hour.

Allow to slightly cool. Cut into 8 slices and enjoy.
