This salad is perfect for vegetarians, but EVERYONE should try this tasty salad! Simple to make and healthy, this salad is perfect for a post workout meal. Ingredients

1 cup fresh spinach
1 Tomato
1/2 cup onion
2 egg whites
1 small potato
3 tbsp fat free Italian dressing
3oz plain Greek yogurt(or enough to coat salad to your liking)
Directions
1) Place spinach in bowl.
2) Heat onions in a pan until brown(PAM cooking spray may be used). Once lightly brown, place onions on top of spinach.
3) Heat potato in microwave for about 3-5 minutes or until fully cooked. Once cooked, cut potato into small chunks and brown in pan. When crisp, place potato chunks on spinach next to onions.
4) Cook egg whites(PAM cooking spray may be used) in pan until fully cooked. Sprinkle with a bit salt and place on spinach.
5) Mix yogurt with dressing and stir until fully combined. Pour over salad.
Enjoy!
