Ingredients

    1 cup skim milk
    1 can pumpkin
    2 eggs (or egg substitute)
    2 Tbsp. suconat, brown sugar, or artificial sweetner
    1 Tbsp. molasses
    1 tsp. vanilla
    pumpkin pie spice to taste (cinnamon, ginger, cloves)

Directions

Mix all ingredients together and pour into a pie pan that has been sprayed with cooking spray. Bake at 325F for 30 to 45 minutes (until set). Serve warm or chilled, with a bit of whipped cream.
