Introduction

Ingredients

    1 Medium Head Cauliflower (Orange or White)
    1 Small Onion Chopped (1 Cup)
    2 Tbsp Olive Oil
    1/4 Cup 2% Milk
    1 Pat of Salted Butter
    Salt and Pepper to taste
    1/4 tsp Red Pepper Flakes
    1/8 tsp Nutmeg

Directions

In a large skillet saute onions in olive oil until transparent. Add Cauliflower and chicken broth. Cook on medium heat until fork tender. Put the cauliflower mixture and the rest of the ingredients in a blender or food processor and blend until the desired consistency.

Serving Size: Makes 6 1/2 Cup servings
