Ingredients

    2 14 1/2-ounce cans chicken broth
    1/2 cup water
    1 cup quick-cooking grits
    1/2 onion, diced
    1 tsp crushed garlic
    1 tsp chipotle adobo sauce
    4 ounces soft fresh goat cheese
    1/2 tsp cayenne
    fresh ground black pepper


Directions

Melt butter in dutch oven. Sweat onions. Add garlic. Add tsp of chipotle adobo sauce and cayanne. Stir. Add broth & water. Bring to boil. Slowly wisk in grits. Bring to boil.

Cover. Reduce heat to simmer. Cook for 5-6 minutes. Uncover. Mix in goat cheese until melted.

Serving suggestion: grilled shrimp and roasted tomatoes and sweet peppers.

Serving Size: Makes 10-11, 1/2 cup servings

    Very Good
    Very good recipe! The instructions are a little sloppy, and need to be cleaned up, but this recipe is easy, and definitely a keeper. - 8/13/12
