Ingredients

    10oz package of frozen chopped spinach
    1/2 small onion, finely chopped
    2 tablespoons butter
    2 tablespoons all-purpose flour
    1 cup plus 2 tablespoons warm milk
    2 tablespoons grated Parmesan cheese
    1/2 teaspoon salt
    Pinch of nutmeg

Directions

Thaw spinach in a colander and squeeze out as much moisture as possible.

Cook onion in butter in a small saucepan over medium-low heat - stirring until onion is soft, about 4 minutes.

Whisk in flour and cook an additional 2 minutes, stirring frequently.

Whisk in warm milk and cook an additional 3 to 4 minutes.

Whisk in parmesan, salt, and nutmeg to taste. Add spinach and cook, stirring until mixture is heated through.

Makes 4 1/2 cup servings.

    This is such a hit at our house that I am now asked to prepare it at least once per week.! We saute garlic along with the onion, use skim milk and add 2 tablespoons reduced fat cream cheese. - 2/18/10

    great basic recipe. I used smart balance instead of butter, Wondra instead of regular flour and extra skim milk instead Parmesan. Also added a little salt and pepper. - 9/24/11
