Number of Servings: 4


    10oz package of frozen chopped spinach
    1/2 small onion, finely chopped
    2 tablespoons butter
    2 tablespoons all-purpose flour
    1 cup plus 2 tablespoons warm milk
    2 tablespoons grated Parmesan cheese
    1/2 teaspoon salt
    Pinch of nutmeg


Thaw spinach in a colander and squeeze out as much moisture as possible.

Cook onion in butter in a small saucepan over medium-low heat - stirring until onion is soft, about 4 minutes.

Whisk in flour and cook an additional 2 minutes, stirring frequently.

Whisk in warm milk and cook an additional 3 to 4 minutes.

Whisk in parmesan, salt, and nutmeg to taste. Add spinach and cook, stirring until mixture is heated through.

Makes 4 1/2 cup servings.

    This is such a hit at our house that I am now asked to prepare it at least once per week.! We saute garlic along with the onion, use skim milk and add 2 tablespoons reduced fat cream cheese. - 2/18/10

  • great basic recipe. I used smart balance instead of butter, Wondra instead of regular flour and extra skim milk instead Parmesan. Also added a little salt and pepper. - 9/24/11

  • Wow, is this good! And so easy to make. I did add garlic, as suggested by others, but I think it would be fine with or without it. I also used a bag of fresh spinach since I had it on hand and added a jar of sliced mushrooms (drained). Delicious! Thanks for a great recipe! - 4/24/10

  • My family loved this and it was so easy to make. I used steamed fresh spinach, I cant believe its not butter light and skim milk to keep it as low fat as possile and extra nutmeg for more flavor. I can't wait to make it again - 5/30/09

  • Very good! My modifications: chopped onion coarsely and used half a large onion, added 1 T minced garlic, used 1 cup ricemilk, 2 T half n half in place of the warm milk. Minor mods, really. Came out wonderful for xmas din din. - 12/25/08

  • This was a great side dish, the whole family enjoyed it! I made a few changes..1 cup 1%milk, 2 tlbs nonfat cr. cheese, 3 cloves fresh garlic & a tad more nutmeg. Delicious! - 4/24/08
