Introduction
The recipe converter was not very easy to use for this recipe & I am completely unsure about the nutrtional values... the sodium looks exremely high & I don't know how much the bird absorbs in the brining process. Ingredients
-
4 quarts water
2 cups Spenda brown sugar blend
1 cup lite soy sauce
1 cup maple syrup
3/4 cup sea salt
8-10 whole cloves garlic, peeled
6-8 whole bay leaves
3 large sprigs of thyme
2 teaspoons whole peppercorns
10 - 12 lb whole turkey, giblets/neck, gizzards removed
Tips
We like to smoke our turkeys, but the weather isn't always conducive to this cooking method. The bird does well in an oven or counter-top roaster, as well as on a grill.
Directions
Place 2 quarts of water and other ingredients in a large pot and bring to a boil, dissolving sugar and maple syrup. Remove from heat, add remaining 2 quarts and allow brine to cool completely before using.
Submerge whole turkey in brine solution for 24 hours; use a large stock pot or brining bag to hold the solution, rotating the bird as needed.
Remove bird from brine solution & pat dry, then cook as per your preferred method.
Serving Size: One 12 lb turkey serves 15
