Ingredients

    3 cans black beans, undrained
    1 yellow or orange bell pepper, chopped
    1 onion, chopped
    1 can chicken broth
    1 can Rotel tomatoes
    1 tsp. chili powder
    1 TBS. chopped cilantro
    2 TBL olive oil
    1 cup diced lean ham

Directions

Saute chopped onion and bell pepper in olive oil. When softened, add in 3 cans undrained beans, chicken broth, Rotel tomatoes, chili powder and cilantro. Simmer for 30min.- 1 hour. Serve garnished with sour cream and grated cheese and more chopped cilantro.
