Ingredients

    1 T. Unsalted butter
    1 med. yellow onion, chopped
    1 cup pearl barley
    8 cups low-sodium vegetable stock
    1/2 cup chopped potato
    1/2 cup chopped carrot
    1/2 cup chopped celery root
    1/2 cup celery
    1 tsp. marjoram, dried
    2- bratwurst, cut into bite-sized morsels
    1-slice turkey bacon
    Grated nutmeg, to taste
    Freshly ground pepper and salt, to taste
    1/2 cut chopped parsley

Tips

Before serving, garnish each bowl of soup with a generous handful of chopped parsley.


Directions

Heat butter in large stockpot, add chopped onion to soften. Add barley until toasted, about 5 minutes. add stock, vegetables, bratwurst, and spices. Cook for 30 minutes.
