Ingredients

    1 tbs olive oil Extra Virgin
    1/4 cup water
    1lb chicken breast strips
    1 Large green Bell Pepper
    1 Large Yellow Onion
    1 can Healthy choice cream of mushroom soup
    .5 cup mozzerella shredded cheese
    2tbs. Daisy light sour cream
    Chili pepper flakes
    Tortilla chips (9 per serving)

    Pico de Gayo, Jalapenos, hot sauce optional

Tips

Is really good with pico de gayo, or hot sauce.


Directions

cook chicken until done in olive oil and chili pepper flakes.
Add green pepper cut into strips
Add onion sliced
add water
Continue cooking until water is gone and veggies are tender.
Remove from pan
Add soup and cheese to hot pan, stir until melted
Stir in sour cream

Plating
Arrange 9 warm tortilla chips on plate.
add 1/4 of chicken and veggies to the chips
drizzle 1/4 cup of cream sauce over chicken and chips.

Serving Size: Makes 4 servings on 9 chips each
