Introduction

Ingredients

1 cup tapioca starch (150 grams)
1 teaspoon gf baking powder
2 large eggs
2 cups shredded Tex Mex cheese
Tips
Try different cheese! Grate sharp cheddar or monterey jack or jalapeno monterey. Throw in a little asiago! (changing the cheese will change the nutritional info).
Directions
Preheat oven to 350 F.
Whisk together the tapioca starch and baking powder for several minutes. (Cover the mixer bowl with a cloth as the starch will fly).
Stir in eggs. Stir in cheese. This will give a wet sticky dough.
Divide into 10 pieces. (Using a 1/8 measuring scoop makes 12, which will reduce the nutritional info slightly.)
Bake 12 to 14 minutes. Do not brown as that will make them hard. Time will depend on altitude and size of eggs.
