Introduction
Quick & easy black bean soup. Mmmmmmm... Quick & easy black bean soup. Mmmmmmm...Number of Servings: 4
Ingredients

2 cans black beans
2 cups vegetable broth
1 med onion, diced or chopped
2-3 cloves of garlic, depending on taste, minced
1-2 Tbsp Cumin (depending on your taste)
salt & pepper to taste
Cooking spray
Directions
Dice onion & garlic, saute using cooking spray.
Drain (but don't rinse) black beans.
Combine black beans, broth, onion, garlic & cumin to saucepan & cook till boiling, allow to simmer for 10 mins. Serve with a Tbsp of sour cream on each bowl.
