Introduction
Cajun Garlic Butter Rice w/ Tender Seasoned Chops with cheesy broccoli, carrots & cauliflower. The chops will be tender enough to cut with a butter knife!! There will be a wonderfully seasoned sauce you can cover the rice and chops with.This recipe was a hit with my super-picky daughter. She literally cleaned her plate!! Ingredients

4 "Iowa" Thick-cut pork chops
1 packet of HyVee (or similar) Cajun Garlic Butter Rice
1 packet of frozen Green Giant Broccoli, Cauliflower, Carrots & Cheese sauce (Weight Watchers 2 pts per serving)
1 cup low sodium chicken broth
2/3 cup low fat sour cream
2 tbsp butter (1 tbsp for rice, 1 tbsp for chop broth)
8 "pinches" of sea salt
1 tsp Freshly ground black peppercorn
2 "pinches" paprika
1 tbsp garlic salt
1 tbsp garlic powder
1 tsp lowry's seasoned salt
1 tsp basil
1 tsp cumin
1 tbsp extra virgin olive oil
2 cups water
Directions
RICE
Follow instructions on the rice packet (boil 2 cups water, 1 tbsp butter/margarine & contents of packet)
-- cook on slightly lower heat when it comes time to simmer (regularly 7 minutes plus 2 minutes of setting time)
-- this can be going on while tending to the chops
CHOPS
Season thawed chops with sea salt, basil, cumin, lowry's, peppercorn and paprika (both sides)
Heat olive oil to "sizzling" in a 10" pan, then place thawed & seasoned chops in for 3-4 minutes per side
Remove chops from pan - set aside
Pour chicken broth in heated pan - add 1 tbsp butter, 2/3 cup sour cream, garlic salt & garlic powder - heat to boiling
Place chops into boiling mixture - heating for 15-20 minutes, flipping every 4-5 minutes until cooked to 160 degrees internal temperature.
VEGGIES
The veggies cook themselves in the microwave per instructions on packet (based on your microwave) -- approximately 6 minutes (on high - 1000watt microwave)
After everything is done, place rice and chops on the plate, put veggies in separate dish (don't wanna mix the cheese with the other seasonings)
Serving Size: serves approximately 4-5 people, throw biscuits/bread into the mix and serve 5-6 people
