Introduction

Tips

Goes great with grilled chicken. Rigatoni, farfalle or small shells also work great in this recipe.


Directions

Turn oer to 400. While water is boiling for pasta clean spinach and chop onion and garlic. Spray baking dish with non stick spray. Cook pasta until almost al dente and sautee onions in olive oil and butter for about 5 minutes or until clear. Add garlic and basil for another minute then add the tomatoes and cook till bubbling. Drain pasta and stir in spinach, pour into baking dish. Pour tomato mixture over pasta and spinach, top with mozzarella cheese and pop into the oven ofr 20 minutes. Let set for a few minutes to cool before servng.
