Introduction

My mom's go-to brunch potatoes. You just can't eat one serving, they are so good! My mom's go-to brunch potatoes. You just can't eat one serving, they are so good!
Number of Servings: 12

Ingredients

    2 lbs. Frozen Hashbrowns
    .5 c butter, melted
    1 lb. shredded cheddar
    1 can cream of chicken soup
    1 pt sour cream
    1 tsp salt
    .5 tsp pepper
    1 medium onion, diced
    2 c crushed potato chips (or cornflakes)

Tips

Can also use cornflakes instead of potato chips, if you use the cornflakes you'll probably have to double the salt in the recipe as well. And use the shredded hash browns in the frozen potato section ideally.


Directions

Melt Butter in a saucepan and add soup, sour cream, and salt & pepper.
In a Large Bowl combine hashbrowns, cheese, and onions. Pour the soup mixture over the top and mix to coat the potatoes. Pour into a casserole dish and then put crushed potato chips on top. Bake about 45 minutes in a preheated 350 degree oven
