Ingredients

    Olive Oil, 1 tbsp
    Ginger Root, 3 tsp
    Garlic, 3 cloves,
    tsp cardamon
    pinch cumin
    a few threads of saffron
    Onions, raw, 3 medium (2-1/2" dia)
    Carrots, raw, 1 medium
    Celery, raw, 3 stalk, medium (7-1/2" - 8" long)
    Potato cubed, peeled, raw, 1 medium (2-1/4" to 3-1/4" Apples, fresh, 1 large (3-1/4" dia) (approx 2 per lb
    Butternut Squash, 2 cup, cubes (remove)
    Better than Boullion Chicken Base, 2 tsp (remove)
    water
    pepper

Directions

Saute ginger, garlic, onions in olive oil. Add spices, saute briefly then add remaining ingredients and cover with water. Cook until vegetables are evenly tender, about 20 minutes. Puree and season with pepper.
