Introduction

Ingredients

    1# 96% lean ground beef, browned and drained (I also rinse it under hot water to really get the grease off)
    1 package taco seasoning (low sodium)
    2 can(s) refried beans (I use the black bean type)
    1 small container Daisy Light sour cream
    1 jar Newman's chunky medium salsa
    1 (1.5 cup) package 2% Mexican blend cheese, shredded

Tips

Can be refrigerated for a couple days (covered). Gently warm/defrost in the microwave (just enough to soften ground beef, but not make the sour cream gross). You could make a layer of guacamole or serve on the side (for those folks that do not like/allergic to it).


Directions

Add taco seasoning and a little water to browned beef in pan. Stir to coat. While ground beef is cooking spread beans in bottom of rectangular casserole pan (or like dish). Layer sour cream next, followed by salsa. Then evenly layer ground beef mixture over salsa and sprinkle cheese over beef while warm (so it melts slightly). Serve with tortilla chips of choice (we like baked scoops).
