Introduction

Ingredients

5 packages (10 oz each) frozen spinach
1 container (32 tbsp) Great Value (Wal-Mart) heavy whipping cream (1 pint)
1 tsp dry mustard
1 tsp garlic powder
1 1/2 tsp red pepper flakes or ground red pepper
1 large raw onion
2 cups Kroger Habanero shredded cheese
16 oz fresh mozzarella (Polly O)
1 cup Kroger cheddar/mont jack cheese
1/4 cup Bob's Red Mill Almond Flour
Directions
1. Thaw spinach.
2. Squeeze as much excess water as possible from spinach.
3. Heat heavy whipping cream and spices in a 4 qt sauce pan on medium heat to just below a boil.
4. Reduce & simmer.
5. Saute chopped onion in 1 Tbsp butter on medium heat 5-8 min.
6. Add onion to saucepan.
7. Mix in almond flour until completely blended.
8. Add to milk in saucepan and mix.
9. Continue to cook until sauce thickens.
10. Cut cheeses into small cubes and add to saucepan.
11. Continue to mix until all the cheese is completely melted and blended into the sauce.
12. BE CAREFUL NOT TO BURN THE SAUCE WHILE CHEESE IS MELTING.
13. Remove from heat.
14. Allow to cool for 15 min.
15. Add drained spinach to cheese sauce and mix till completely blended.
16. Spoon into 11x9x2 or large casserole and top with grated Monterey Jack cheese
17. Bake at 350 degrees F for 12-15 minutes until hot and bubbly.
