Ingredients

    1-1/2 pounds lean round steak, cut into 1-inch cubes
    3 cups beef broth
    1 medium head cauliflower, separated into florets
    1 green pepper, cut into chunks
    1/4 cup reduced-sodium or regular soy sauce
    1 garlic clove, minced
    1 Tbsp grated fresh gingerroot
    2 to 3 tablespoons cornstarch
    1 teaspoon sugar
    1/4 cup water
    1 med onion cut into large chunks
    Cooked rice

Tips

Depending on the meat that you use the cook time could be reduced to an hour and done on the stove top. I used meat that really benefited from the longer time. Making it ideal for the slow cooker.


Directions

Brown the beef and add to the crock pot with the onion garlic and ginger. Add the broth and cook for 6 hours. Add the green pepper and cauliflower, cook for another hour. Mix the water, sugar, soy sauce and cornstarch then add to the stew mixture. Serve with cooked rice (not included in calories)
