Introduction

Ingredients

sweet potatoes I use the golden one, chopped into bite size pieces.
Onion
garlic - I grate the garlic on fine
olive oil
good handful of mushrooms qrted
spinach fresh and chopped good bunch
Feta crumbled
eggs, milk dash of chilli sauce and mustard
Directions
add oil to pan and cook the onions and sweet pots grate over the garlic add mixed herbs if you want. cook till off tender .
add mushrooms and stir make sure it doesn't stick. then add spinach a bit at a time ( chopped).
Meanwhile whisk together the eggs milk mustard, dash of chilli sauce.
crumble feta cheese over veggies then pour over egg mixture and tpat down.
place in pre heated oven for approx 15 minutes until set firm to touch.
his is nice served with salad a a little home made salsa
Serving Size: 10 inch cast iron pan with good 2 inches on the side ( or a can you can have on stove top and in oven
