Ingredients

1 lb. dry lentils
8 oz. chicken breast. cuts into strips
1 cup diced celery
1 cup shredded carrots
1 medium onion, chopped
4-5 cloves garlic, minced
1-2 cups kale, shredded
1 jalapeno pepper, chopped (optional)
Cumin, to taste
Red Pepper Flakes,to taste
Salt & Pepper, to taste
Tips
Eat with dash or two of tabasco for an extra kick
Directions
Put 8-12 cups water in stock pot on high heat. Add diced celery, carrots, onion, garlic, and jalapeno pepper. After 5 minutes, add the dry lentils, chicken breast strips and spices. After the foam of the lentils has boiled away, cover with the lid and turn the heat down to medium-low. Add-in the chopped kale. Simmer ingredients together for 30 minutes.
