Ingredients

    3 tbs canola oil
    1 lb. boneless chicken breast, cut into ¼ inch strips
    2 fresh green peppers cut into ¼ inch strips
    1 small can (8 oz.) water chestnuts
    1 large can (20 oz.) pineapple chunks
    1 small can (11 oz.) mandarin oranges
    ¾ cup brown sugar
    1 package (4 serving size) chicken flavored rice, prepared as directed

Tips

Do not over cook chicken or it will be dri.
Can also use pork.


Directions

Drain pineapple and mandarin orange juice into small bowl. Add brown sugar and stir until dissolved. Set aside.
Cook chicken turning occasionally until lightly browned completely and cooked thru. About 5-7 minutes. Remove chicken from skillet
Heat oil in large skillet and add water chestnuts to oil and stir to coat evenly. Cook about 2 minutes until browned. Add green peppers to skillet. Cover and cook an additional 2-3 minutes. Add pineapple and oranges to skillet. Add about ½ of the brown sugar juice mixture and continue cooking for 3-4 more minutes. Add more brown sugar juice mixture if too thick.
Add chicken back in and cook about 3 minutes. Stir well to mix well. Cover, turn off heat and let stand about 5 minutes.
Serve over rice and enjoy a delicious meal made in one skillet.
