Introduction

A baked salmon dish that is very filling and very appealing to the eye. It's a great dish to serve for dinner guests - mine always request the recipe. Number of Servings: 4

Ingredients

    16 oz salmon filet, deboned and skin removed
    3 tsp French's Honey Dijon mustard
    2 large slices whole grain bread, blended to create crumbs
    1 oz (20 halves) pecans, chopped
    1 tsp dried parsley

Directions

Preheat oven to 425 degrees F.

Combine bread crumbs, pecans and parsley in a small bowl and set aside.

Place fish into greased baking dish. Spread honey dijon over top of fish. Top fish with bread crumb mixture.

Bake for approximately 20-25 minutes until fish is firm. Makes four 4-oz serving.

*Note: if you find yourself making this fish frequently, you can blend up an entire loaf of whole-grain bread and place the crumbs into a freezer bag to freeze. Then you can just take out as much as you need at a time.
