Introduction
Not healthy - way too much fat - but I wanted to add it so that I know what I'm eating. Not healthy - way too much fat - but I wanted to add it so that I know what I'm eating.Number of Servings: 36
Ingredients

1 lb. Ground beef
1 lb. Jimmy Dean Hot Sausage
1 tsp. Pepper
1 Tbs. Garlic salt
2 tsp. Onion powder
1 tsp. Salt
10 c. chopped cabbage (I used half green and half red)
1 c. bean thread (Cellophane Noodles), chopped
Canola oil for frying
Directions
Cook and mix meat; add seasonings. Mix in cabbage and bean thread. Wrap in egg roll wrappers (use water on the edges of the wrapper to seal). It's about 1/4 cup mix per wrapper. Fry (I fry mine in a large skillet filled with hot canola oil).
Please note: the amount of canola oil in the nutrition info is an approximation. I estimated 1 tablespoon of oil per egg roll (it adds up to about 2 1/4 cup oil being absorbed during the cooking process). The amount of oil will vary somewhat; and generally, cooking faster and at higher heats seems to mean less oil absorption in the final egg roll. Unfortunately, I don't know a way of making good egg rolls that doesn't involve frying them. :p
You could make the filling a bit healthier by substituting turkey sausage for the pork sausage.
