Ingredients

    1 pound white beans
    1/2 cup onion, diced
    1/2 cup celery sliced
    1/2 cup carrot, sliced
    1/4 tsp pepper
    1 tsp salt
    4 slices bacon
    6 cups water

Directions

Wash and sort beans. Cover them with water, bring to a boil, turn off heat and let stand covered for an hour. Put the beans (with liquid) in crockpot with other ingredients and the six cups water. Cook until beans are tender. Makes approximately 8 servings.

Note: The beans used for calculation were 20 calories more per 1/4 cup dry than the white beans I use. This leads to a differetial of approximately 30 calories per serving.
