Ingredients


    Part 1
    1 c. celery,chopped
    1 c. onion, chopped
    4 fresh mushrooms, diced, optional

    Part 2
    3 1/2 c. cooked Brown Rice (Basmati preferred)
    1 c. diced soy chicken, drained
    1/2 c. water chestnuts sliced (one can)

    Part 3
    1 c. hot water
    1/3 c. raw cashews, washe

    Part 4
    1/2 c. water
    1/2 c. eggless mayonnaise(vegenaise)
    1 TBS Bill's Best Chik'nish Seasoning
    1 TBS Braggs Amino Acids, diluted 1:1 with water
    1/2 tsp garlic powder
    1/4 tsp celery salt



Tips

Note: Bragg's Amino acids is diluted down to a 1:1 ratio with water to reduce sodium in each serving.


Directions

Ingredients for Part 1 Saute until tender with nonstick spray or a little water.
Part 2 ingredients--drain water chestnuts. Combine these ingredients with sauteed vegetables.
Part 3 ingredients--combined into blender and whiz until smooth as cream.
Part 4 ingredients--add to blenderized cashews. Blend until just mixed. Fold this into rice vegetable mixture.
Spoon into a 9x13 casserole, sprayed with non stick spray
