Ingredients

    2 meduim onion-chopped
    2 medium carrots-chopped
    2 cloves garlic-minced(finely chopped)
    4 cans of chicken stock(can use veg. stock)
    1 can of diced tomatoes
    1 cup brown rice
    1 can of fat free navy beans(rinsed)
    1 big bag of baby spinach
    1 big zucchini or 2 medium(chopped)
    2 tsp of Italian Seasoning
    1/2 tsp o f black pepper
    2 tablespoons of olive oil or canola oil

Directions

In large stock pot-in olive oil put carrots,onions, &garlic-cook for about 3 minutes on medium until onlons are clear-add chicken broth,diced tomatoes,brown rice, Italian seasoning and pepper, cook about 30 minutes(until rice is cooked) Then add navy beans,spinach(chopped), zucchini cook for about 5 minutes more. about .-Can serve with a little parmesean cheese on top-Good with corn muffins. Makes a non-meat meal, make at least once a week.

    As much as I would love to believe that this recipe is really only 21 calories I know that a cup of rice alone would make up more than that... could you please check your data? - 4/13/08
