Ingredients

1 lb whole wheat penne pasta
1/14 cups broccoli florets
3 T olive oil
4 links sweet turkey sausage
1 cup chopped (jarred) roasted red bell peppers
2 T chopped fresh parsley (okay to sub dried)
1/2 tsp salt
1/8 tsp hot red pepper flakes
Directions
Cook pasta in a large pot of boiling salted water per directions on package (approx 10-12 minutes). Add broccoli for the last 3 minutes. Drain.
Simultaneously, in a medium nonstick skillet, warm 1 T olive oil over medium -high heat. Add sausage and cook, runing frequently for 10-12 minutes or until well borwned and cooked through. Transfer to a cutting board to cool. Cut crosswise into 1/2 inch thick slices.
Return pasta and broccoli to cooking pot. Add Sausage, roasted peppers, remainder of olive oil, parsley, salt and pepper flakes (more or less depending on how spicy you like it). Toss together over low heat for 5-10 minutes. Serve hot.
Makes 6 servings of main dish. More if used as a side dish.
