Introduction
Baba ghanoush is one of my favourite mediterranean dishes, but it normally calls for ALOT of olive oil! Here is a healthfied version. Serves 2. Ingredients

1 aubergine/eggplant
1tsp of EVOO
o.5tbsp Tahini
2 cloves of Garlic, minced
1tsp toasted cumin seeds
1tsp lemon juice (optional)
Dash of Salt
Fresh Parsley, chopped (optional)
Directions
1. Hold the aubergine over an open gas hob flam (or bake it) until the skin blackens and the flesh softens. DO NOT SKIP THIS STEP!! This is an important step to get that smokey flavour.
2. Place the aubergine on the side to cool and lightly toast the cumin seeds in a dry frying pan to release the flavour.
3. Cut open the aubergine, scrape the flesh from the skin and place in a food processor.
4. Add all of the other ingredients and whizz.
5. Serve with parsley if required and a drizzle of olive oil (not included in the calorie count.)
