Ingredients

    2 medium sweet potatoes
    1 shallot, minced
    2 tbl margarine
    1 bag fresh baby spinach
    1 cup chickpeas

Tips

The potato mixture can be scooped back into the potato skins before baking to create individual servings.


Directions

Bake the sweet potatoes in a 350 oven until soft, 45 -60 minutes.
While potatoes are cooling, saute shallots until translucent.
Add spinach and saute until wilted.
Scoop cooked sweet potatoes into a bowl.
Mix in the spinach and shallot.
Stir in the chickpeas.
Bake in 350 oven until heated through, 30 - 40 minutes.
