Introduction

Ingredients

    1 bunch of flat leaf parsley
    green onions or red onion
    hot house cucumber without seeds and or skin
    mint is optional usually its a few leaves.
    lemon juice of 1 lemon
    salt
    extra virgin olive oil

Tips

let sit over night or at least an hour before serving so the lemon juice and olive oil marinate the herbs. You may add tomatoes and bulgar wheat or cooked Quinoa.


Directions

chop everything very fine. parsley can be chopped in food processor. I prefer to do it by hand.
