Ingredients

2 cups split peas plus water to rinse
3 cups water
3 cups unsalted chicken stock
1 cup chopped onins
1 cup chopped celery
1 cup chopped carrots
1 cup chopped kale
1 TSBP Curry Powder (or more to taste)
Tips
Serve with a dollop of greek yogurt or low fat sour cream.
Directions
Soak and Rinse 2 cups of split peas in water. Discard the soaking water. Add 3 cups of fresh water and 3 cups of unsalted cooking stock.
Sautee the onions and celery in the olive oil. Add this to the split peas. Then add the chopped carrots and kale. Cook in the crock pot for 1 hour on high.
Stir in the curry powder and sommer for 3-4 more hours until the peas are tender.
Serving Size: MAkes about 10 = 3/4 cup servings.
