Ingredients

    Egg, fresh, 5 large
    Pie crust, frozen, ready-to-bake, 1 crust, single 9"
    Butter, salted, 2 tbsp
    Onions, raw, 1 medium (2-1/2" dia)
    Garlic, 3 cloves
    Parmesan Cheese, shredded, 2 tbsp
    Fat-free Half and Half Cream, .5 cup
    Spinach, fresh, 2 cup
    Mushrooms, fresh, 1.5 cup pieces
    Basil, fresh, 1 tbsp
    Sour Cream, Low-Fat, 2 tbsp

Tips

I only use enough butter to start a saute on the veggies, I then cover with a lid to let them sweat and cook in their own moisture.


Directions

- Prehead oven to 375 degrees
- Saute onion in garlic until firm. Add mushrooms.
- When mushrooms have cooked down, add fresh spinach and basil, cover
- Mealwhile beat eggs, half and half, and Parmesan in sepearte bowl. Season with a pinch of salt and pepper.
- Add sour cream, mix in thoroughly. Season with Salt & Pepper. Add mixture to pie crust.
- Pour egg mixture over the top of mushroom/spinach mixture in pie crust.
- Place pie pan on baking sheet to catch any potential over spill. Place in oven for 40 minutes.
- After 40 minutes, remove and let cool for 10 minutes to firm up before slicing and serving.
