Just your basic salad. You can lighten by using reduced fat mayo, greek yogurt or even avocado. Calculations are made using regular mayo (because that's what I have.) Ingredients

    1 lb cooked chicken breast
    0.4 lb diced onion (1 med)
    0.3 lb diced celery (2 stalks)
    0.4 lb mayonnaise
    1 tsp seasonings as desired: I used Adobo (a season salt), pepper and garlic powder

Tips

Chop with a knife if you like a coarser texture, use food processor if you like a smoother product.

Serving Size: Makes 2 lbs chicken salad. Portion 0.2 per sandwitch/ or a muffin scoop.
