Ingredients

    2 Leeks, sliced into wide strips
    2T butter, unsalted
    2 cloves of garlic, chopped
    1/4C low-sodium soy sauce
    8C vegetable broth
    1 head of fresh kale, chopped into large pieces
    1 oz. of dried oyster mushrooms
    1 oz. of dried lobster mushrooms
    8 oz. of fresh bean sprouts
    Salt, to taste
    Black pepper, to taste
    2t Asian five-spice

    Optional: fresh cilantro to garnish

Tips

For extra heat, add Sriracha. Another tasty addition would be chopped peanuts. Also, feel free to add rice or rice noodles.


Directions

Melt butter in a large sauce pot over medium heat. Add garlic and leeks and cook until they become tender (about 7 minutes). Add soy sauce, and briefly stir. Add vegetable broth, dried mushrooms and kale. Bring to a boil, then reduce and simmer for 30 minutes. Add bean sprouts, simmer for 2 more minutes, and then remove from heat. If desired, top with fresh cilantro.
