Introduction

Ingredients

    3 T olive oil
    3 cloves garlic
    2 onions, chopped
    2 c. chopped celery, including some greens
    5 carrots, sliced
    6 t. McCormick beef base in 4 cups of water
    2 additional cups of water
    2 15 oz. cans of tomato sauce
    1 can of kidney beans, drained
    1 can of chickpeas, drained
    6 oz. frozen green beans
    2 c. frozen spinach
    2 t. oregano
    1 T. dry basil
    1/4 t. thyme
    3/4 or 2 oz. whole wheat pasta
    salt & pepper

Directions

Saute garlic, onion, celery in olive oil in large stock pot. Add the rest of the ingredients, adding pasta and spices last.

Simmer for 30 - 60 minutes
