Ingredients

    1 Small Bottle Light Cream (185ml)
    3 TBSP Low Fat Ricotta Cheese
    7 Medium Sized Mushrooms
    1 cup cubed eggplant
    1 Brown Onion
    1/2 Cup Spring onions
    2 Tbsp Olive Oil


Directions

Heat Oil in Frying pan
Add onion, Eggplant & Garlic cook until transperant
Slice Mushrooms and add too pan, let them cook down
Add spring onions for 1 min then add cream and bring the boil.. Just...
