Ingredients

1/2 lb whole wheat macaroni
3 tbsp flour
1 tbsp mustard powder
1/2 tsp paprika
1 tsp salt
2.5 C low fat milk
Bay leaf
1/2 C minced onions
4 oz low fat cream cheese
6 oz shredded cheddar
2 pieces whole wheat bread
Olive oil spray
2 tbsp fresh parsley, chopped
fresh ground black pepper
Directions
Preheat oven to 375 degrees. Cook pasta al dente in lightly salted water.
Tear bread into small pieces, put on baking sheet, and spray with olive oil spray & sprinkle with salt. Bake for 7-10 min. until toasted and brown.
Toss parsley and black pepper and set aside.
Combine flour, mustard, salt, and paprika in a pot. With heat on medium, slowly pour in milk while whisking. Add onions and bay leaf. Bring to simmer and stir in cream cheese. Whisk until smooth and simmer for 2 minutes until thick and creamy.
Take the sauce off the heat, remove bay leaf, and stir in cheddar cheese until melted. Pour over macaroni. Top with bread crumbs and parsley/pepper mixture.
