Introduction
Not too sticky- I promise! But definitely Yum-O! Who-da thought chicken could be so easy and delish?! It goes great w/ rice and was a staple of my obaasan (grandma) during the holidays and on afternoon picnics to Golden Gate Park. Not too sticky- I promise! But definitely Yum-O! Ingredients

8 chicken legs/drumsticks, skin on (gives the sauce a yummy flavor when cooking)
1 cup water
1/2 cup balsamic vinegar
1/3 cup low sodium soy sauce
2 1/2 tablespoons sugar
1 garlic clove, minced (or equivalent of jarred garlic)
1/2 tsp red pepper flakes)
Directions
1. Place all the ingredients in a saucepan over a high heat.
2. Bring to the boil, then reduce to a simmer for about 20 minutes.
3. Remove any scum that rises to the surface.
4. Increase the heat, turning the drumsticks frequently in the sauce, and cook until the liquid has reduced to a sticky glaze. The amount of time for this varies and may take a bit- but the time and effort are worth it. If the chicken is done before the sauce reduces (~160-165F), remove the chicken, set aside, and finish reducing the sauce.
5. To serve, arrange the chicken on a serving platter and spoon the glaze over. Goes great w/ hot rice!!! Make it a complete meal with some steamed veggies or a nice big salad. YUM-O!

At last a recipe the whole family likes. I didn't measure my hot pepper flakes exactly but I'll add some more next time for a little touch of heat as the flavour was good but not spicy enough for me. I had more than 8 drumsticks, so I took the skin off some so as not to affect the fat content. - 5/26/08
