Ingredients

1 large onions, thinly sliced
1 tsp. olive oil
3 garlic cloves
1 tablespoon fresh ginger
2 tablespoons red wine or 2 tablespoons cooking sherry
1 teaspoon cumin
1 tablespoon cinnamon
1 tablespoon paprika
1 cup water (or chickpea cooking liquid)
1 tablespoon salt
2 cups cubed sweet potatoes
1 cups cooked chickpeas
4 cups cubed potatoes
Directions
1. cook sweet potatoes and potatoes together.
2. while they're cooking, brown onion in oil until golden colored
3. mince garlic and ginger together (I use a blender) and add them to the mixture in the skillet, together with the wine and spices
4. simmer for 2 minutes.
5. when the potatoes are parboiled, add them and the chickpeas (together with their cooking liquid) to the spiced mixture, mixing thoroughly.
6. heat through and serve.
Serving Size: 4 - 5 servings
