Ingredients

    3 15 oz cans solid pack pumpkin
    2 cups chopped raw onion
    2 cups chopped raw carrot
    1 stalk celery
    2.5 Tbs olive oil
    1 Tbs Mild Curry Powder
    1 inch section grated fresh ginger
    1 cube chicken boullion
    1 cup coconut cream
    1 tsp minced garlic

Directions

Saute curry powder, garlic, and ginger briefly in olive oil, then saute onions, celery, and carrots until tender. Add pumpkin, 2 cans worth of water, and the boullion cube, and let simmer 20 minutes. Blend and serve.
