Ingredients

    10 LaTortilla Factory low carb high fiber tortillas
    12 oz. cooked, shredded chicken breast
    1/4 cup chopped onion
    1 tsp cumin powder
    1/4 cup fresh cilantro
    1.5 cups low fat colby jack- shredded
    3 Tbsp. butter
    3 Tbsp. flour
    2 cups chicken broth
    1 cup low fat sour cream
    1 (4 oz) can diced green chillies

Tips

To make the sauce a bit spicy, I add a couple of shakes of Mrs. Dash Southwest Chipotle seasoning or cayenne pepper.


Directions

Preheat oven to 350 degrees. Spray a 9x13 pan
Mix chicken, onion, cumin, cilantro and 1/2 cup of the cheese. Warm the tortillas just a bit in the microwave to make them easier to roll. Roll up filling equally in tortillas and place in pan.
In a sauce pan, on medium heat, melt butter then stir in flour and using a whisk to stir, cook 1 minute. Add broth and stir until it is smooth and has thickened a bit. Take the sauce off the fire and then stir in sour cream and chilies. Pour over enchiladas and top with the remaining cheese. Bake 25 min-30min.
