Introduction

These are a delicious sweet treat! These are a delicious sweet treat!
Number of Servings: 12

Ingredients

    - 1c all-purpose flour
    - 1c whole wheat flour
    - 1/2 c Splenda
    - 1/4c brown sugar
    - 2 tsp baking powder
    - 2 tsp instant coffee granules
    - 1/4 tsp salt
    - 1 tsp cinnamon
    - 1c milk
    - 1/2 c melted margarine
    - 1 egg
    - 1 tsp vanilla extract
    - 1/2c chocolate chips

Directions

1. In large bowl combine flour, sugar, Splenda. baking powder, coffee, salt & cinnamon.

2. In another bowl, mix together milk, melted margarine, egg and vanilla.

3. Pour liquid ingredients into dry mixture. Stir to combine. Do not overmix (15-20 strokes max.). Stir in chocolate chips

4. Fill paper-lined muffin cups (12)

5. Bake at 400 F for 20min.

Makes 12 servings of 1 muffin.

    Very Good
    Wonderful texture. Great taste. I made this using a little allspice because I had no cinnamon and I also had no vanilla but the muffin tasted great anyway.
    They are small, don't rise a lot, but they are light, not heavy.
    I will try using some applesauce in place of some margarine next time.

    These sound so delicious! Do you use instant coffee grounds? What are instant coffee granules?? And have you ever substituted the splenda brown sugar? - 1/12/08

    Instant coffe granules are the powdered instant coffee you get in the jar. I don't buy the Splenda brown sugar so I haven't tried it but please let me know if you do :)
