Ingredients

    Black beans - 1 can rinsed and drained
    1/2 med. red pepper, chopped
    1 cup frozen corn
    1 bunch green onions, chopped
    1/2 bunch cilantro, chopped
    generous pinch of salt
    1 1/2 tsp. cumin
    3 Tbsp. lime juice
    2 Tbsp. balsamic vinegar

Tips

sprinkle salt on top of cilantro to make chopping easier
Make sure to rinse and drain beans
Holds up well in the heat
