Ingredients

6 tablespoons water
3 tablespoons ground flax (Egg Replacer)
1 cup organic cornmeal
1 cup unbleached flour
1/3 cup Sucanat (raw sugar)
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup nonfat, unsweetened almond milk (ie Silk brand)
1/3 cup organic unsweetened apple sauce
Tips
For those interested, I've substituted flax eggs for chicken's eggs, almond milk for whole cow's milk and Apple sauce for oil. This turns out fantastic every time! Delightful with chili. This is a very versatile recipe, you can add a can of cream corn and/ or jalepenos etc. Just adjust your other wet ingredients accordingly. Enjoy!
Directions
Stir flax into cup with water, microwave 1 min & set aside. In bowl, combine all dry ingredients & stir. Then mix in the wet ingredients including the flax-water mixture.
Pour batter into baking pan sprayed with Canola. Bake in presented 375 deg oven for around 25 min. Or until tootoothpick comes out clean.
Serving Size: makes 16 pieces when cooked in a glass 8 x 8 baking pan.
