Introduction

Highly experimental. My husband was very recently diagnosed with type 1 Diabetes, I don't eat gluten and we have 2 preschoolers. I'm trying to make a cookie that everyone can eat. I'm sharing this recipe strictly to get the nutritional info but would love any suggestions! Highly experimental. Ingredients

    2 cups butter
    1.5 cups Splenda
    .5 cups organic brown sugar
    6 eggs
    2tsp vanilla
    2 scoops vegan protein powder (I used Natural Factors Vanilla)
    1 cup gluten free flour mix
    .5 cup quinoa flour
    1 tbsp xanthum gum
    .5 cup unsweetened coconut
    1.5 cups slivered almonds
    1.5 cups gluten free oats (not quick cooking)
    1tsp salt
    1cup flax meal
    1tsp baking powder
    2tsp baking soda
    .5 cup chocolate chips
    .25 cup raisins
    1 cup chopped dates

Tips

I may leave out the baking powder next time to make a flatter cookie.


Directions

Heat oven to 350. Cream butter and sugars, add eggs one at a time, add protein powder and vanilla. Meanwhile combine flours, xanthum gum, salt, baking soda and powder in bowl. Add to creamed mixture. Add remaining ingredients. Drop by spoonful onto ungreased cookie sheet. Bake 10-12 minutes. Flatten lightly with spatula if you'd like more of a cookie shape as they tend not to spread.
