Introduction

A lower calorie take on traditional guacamole. All the flavor and healthy aspects of the traditional with more veggies to cut the calories and up the nutrients.

Ingredients

    *Avocado, whole, medium 1 serving = 1 medium whole avocado, 3 serving
    Red Ripe Tomatoes, 3 Italian tomato
    *Peppers, sweet, red, fresh, 1 cup, chopped
    Onions, raw, .5 small
    Serrano Peppers, 3 pepper
    Cucumber (peeled), .5 large (8-1/4" long)
    Lime Juice, 2 lime yields
    Shallots, 2 tbsp chopped
    Cilantro, raw, 2 tbsp
    Mushrooms, fresh, 1 cup, pieces or slices
    black pepper to taste (I used probably 1-2 tsp)
    garlic pepper to taste (I used about 1/3 tsp)
    salt (I used a pinch)
    cumin (I used a dash or two)

Tips

A tip for storing leftovers- place the leftovers in a air tight container, then cover with paper towel folded and placed over the top so there are no air pockets. Then soak paper towel with lime or lemon juice and cover. The acidic nature of the juice keeps the avocado from browning (also a good trick for other fruits and veggies that brown easily i.e. apples). (There is no set amount of juice to use, I do it so the paper towel is soaked enough that it will keep the avocado moist).

Next time, to suit my preferences, I will add a little more kick with more Serrano pepper or spices.


Directions

finely chop all veggies, season to taste with fresh black pepper, cumin, garlic pepper, and a hint of salt, and mix together for consistency of your liking, .

Serving Size: Figuring recipe makes 16 servings with an estimated half cup serving size
