    *2 Chicken Thighs, bone and skin removed
    *3-1/2 cups Cabbage, Cole Slaw Mix
    *1/2 Raw White Onion
    *1/4 cup Lite Soy Sauce
    *2 tbsp Arrowroot
    *1 tsp Pepper, red or cayenne
    *1 sm. Miracle Shirataki Noodles pkg.
    *1 tbsp Coconut Oil


Can always use chicken breasts if you don't care for thighs. I just used what I had available.


Put coconut oil in wok or nonstick pan and heat up. Add diced chicken and sliced onions. Stir-fry until browned. Add cole slaw mix, stir-fry until slightly softened. Add previously mixed together arrowroot and soy sauce. Turn down heat to med/low. Place lid on pan and allow to simmer for 5 minutes. Remove lid, add 8 oz pkg of drained and rinsed Shirataki noodles and the tsp of cayenne pepper. Stir well, allow to simmer 2 more minutes so the noodles can absorb the flavors, then serve.

Serving Size: Makes 2 large servings
