Ingredients

    1 cup celery, chopped
    1 cup onion, chopped
    1 tbsp vegetable oil
    2 pounds cleaned squid, cut into 1” pieces
    ¼ cup fish stock
    ¼ cup tomato paste
    ¼ cup cider vinegar
    ½ teaspoon salt
    1 tablespoon sugar
    1 teaspoon black pepper

Directions

Saute celery and onion in oil until tender. Add squid and fish stock, cover and simmer for 5 minutes.
Add the tomato paste, vinegar, sugar, salt, and pepper.
Re-cover and simmer gently for 10 minutes.
