Introduction

a low cal, low fat, white chili a low cal, low fat, white chili
Number of Servings: 4

Ingredients

    1 tbsp olive oil
    1 lb boneless, skinless chicken breast, cubed
    1/4 chopped onion
    1 cup chicken broth
    1 4oz can chopped green chiles
    1 15oz can white beans, undrained
    2 green onions, sliced

    Spice Blend:
    1 tsp garlic powder
    1 tsp ground cumin
    1 tsp oregano
    1/2 tsp cilantro
    1/8 tsp red/cayenne pepper

Directions

1. Heat oil in pan over medium heat. Add chicken cubes and onions. Cook 4-5 minutes.
2. Stir in broth, chiles and spice blend. Simmer 15 minutes.
3. Stir in beans (liquid also). Simmer 5 minutes.
4. Top with green onions.

Top with monteray cheese, if desired. (Cheese not included in nutritional information.)
